Essay

The thesis examines the specificity of convective drying of thermolabile materials to a low residual moisture content. Ways of intensification of this process are founded and en-ergy-efficient drying modes are developed. The results of studies of sorption and thermo-physical properties of thermolabile materials are present. The dependence of the drying ki-netics on the thermomoist state of the drying agent is determined. Basic principles of the heat-mass exchange in dehydration to low residual moisture content are investigated. The production technology of food powders from thermolabile materials is developed. According to the technology the dehydration of raw materials is carried out by a multi-stage modes with forced dehumidification of the drying agent by use of the heat pump in the final stage.
