Essay

The dissertation is devoted to the development of science-based resource-saving technology of production of solid rennet cheese high quality with short-term maturation and expansion of assortment of natural cheeses with a low temperature of the second heating. It is proved, that for obtaining of high-quality cheese from the milk, which has passed high-temperature processing, it is necessary to carry out its earlier ripening at a temperature of 10 оС for 12 hours.
