Essay

The thesis is dedicated to justification and selection of technological solutions in order to improve the quality of grain-based bread and wafers and development of the technologies of their production. According to the results of the conducted complex of theoretical and practical experiments, the selection is justified, the chemical composition is studied and technological expediency of usage of the flour made of wheat and oat flake crumbs and ground sesame during the production of grain bread and wafers is proven.
