This thesis is devoted to the research of theoretical regulations and elaboration of practical recommendations for improving the product quality management system in catering economy. The analysis of the theoretical foundations of product quality management is performed aiming at specification, systematization and generalization the main concepts in this sphere. The spiral of change of product quality has been improved by defining its individual component (methodological approaches to quality management). Appropriateness of use an expert-sociological method is substantiated for realization the assessment of product and services' quality. The condition has been analyzed and problems of development the catering economy in the current conditions of business have been revealed. The indices for the product quality assessment have been determined before and after the implementation of the systems, and the model of systematization of factors influence on the product quality has been elaborated. Structural and logical model of identifying the customers' needs by taking into account the ways and methods of their research has been improved. A methodical approach for identifying the reserves of product quality management has been developed and a system of measures the market assessment product quality has been substantiated. An approach to minimization the overhead costs and product quality control on the basis of economic and mathematical modeling has been offered.
