The thesis is devoted to development of technology of dairy ice cream and aromatic ice cream with the use of new types of plant extracts obtained by rational modes and methods extraction. The were developed new recipes, universal technological scheme and design of standardized documents for the production of ice cream with extracts of hibiscus, roses and lavender.
