This dissertation is focused upon developing the protein and mineral gerodietetic fortifier and investigating the possibility of its usage in producing cooked sausages enriched with the organic form of calcium. The regimes of the fermentative proteolysis (pH, environment temperature, duration, hydromodulus, fermentative product concentration) with the help of cattle rumen food collagenasum have been scientifically grounded. Protein and mineral gerodietetic fortifier technology has been developed. Functional and technologic fortifier features and its warranty period have been investigated. The content of calcium, phosphorus and Magnesium in ultimate products as well as their condition and warranty periods has been estimated.
