Essay

The considered thesis gives prominence to the scientific substantiation and development of decorative souffle type semi-finished products for cakes and pastries of special purpose (functional, dietary and dietary-functional). Thus it specifies technological and phisiological properties of new kinds of decorative souffle type semi-finished products of special purpose. The thesis presents the developed technologies of decorative souffle type semi-finished products of functional purpose by means of white crystals and lactulose application; of dietary purpose by means of fructose application; of dietary-functional purpose by means of such mixtures as fructose-lactulose, erythritol-fructose, maltitol-fructose application. The receipts of new kinds of decorative souffle type semi-finished products and of cakes and pastries based on these products exploitation have been developed. The offered technology has been evaluated under production conditions.
