Essay

The thesis is devoted to development of technology of milk ice-cream with vegetables. Regarding to a chemical composition and biological value it was proved of its combining with a milk base and an opportunity of their using in the ice-cream production as a technological, functional and enrich component. There were developed new recipes, universal technological scheme and design of standardized documents for the production of ice cream with of pumpkin raw material.
