Essay

The aim of thesis was the improvement of method of excessive organochlorine pesticides residues detection in food of animal origin, the study of the limits of detection, the evaluation of risk of pesticide presence in slaughtered broiler chicken products. The analysis of state monitoring (2009–2013yrs.) for pesticide residues in poultry and grain, which gave no positive results was performed. 10 samples of feed grain from different places of cohesion in Mykolyiv region were studied, in 3 of which 0,25 mg/kg, 0,3 mg/kg and 0,32 mg/kg gamma-HCH was found. The method of excessive organochlorine pesticides residues detection in food of animal origin was improved and the valid characteristics of the improved method, according to the ISO 17025 standard and European Instruction EC 657/2002 were experimentally defined. It was found out that the influx of 0,1 and 0,3 mg/kg doses of gamma-HCH persticide to the broiler chickens organisms for 38 days produces negative effects on hematological and biochemical indexes of blood serum. The evident signs of granular degeneration of hepatocytes were found in both groups; the granular dystrophy and cardiac necrosis, Zenker's degeneration; the granular dystrophy epithelial tubules-in kidneys. In order to detect gama-HCH by studying the broiler chickens meat, the subcutaneous fat must be taken.
