The thesis is devoted to the substantiation process sub-freezing of squash and pumpkin in preparation for long-term storage. This paper describes a solution of scientific and applied tasks is to increase the shelf life of vegetable products by optimization of the mechanical and thermal treatment and the development of necessary structural equipment. Proposed the device for sub-freezing of materials, which allows to carry out pre-sliced vegetables sub-freezing avoiding clumping phenomenon in long-term storage. The influence of low temperatures on biochemical and microbiological parameters of frozen vegetables.
