Thesis is devoted to the minced carp technology substantiation and improvement by washing with electroactivated water systems. Domestic fishing industry situation analysis, with cultivated common carp processing prospects indication are presented. It's minced muscle tissue main techno - chemical characteristics are defined.The pond raw washing studies results by electrolyte solutions, electrochemically activated water and fresh water systems are describes.The qualitative characteristics of minced fish, obtained in the prescribed regimes, and gels at their base are investigated.
