Essay

The dissertation is devoted to scientific explanation and development of technology of condensed milk canned with fruit fillings. Choice of fruit fillings was justified which allows extending of the taste range and allows to get product with composed carbohydrate content with lower share of hlikemic and higher vitamin and mineral composition. We study some qualitative characteristics of the developing products. Developed draft regulatory documents on condensed milk with sugar and FBS, the approbation of the new technology in terms of production of PJSC "Pervomajskyj Dairy Plant", JSC "Ichnyansky Dairy Plant" was done.
