The thesis is dedicated to the scientific description and development of cultured butter with probiotic properties with the usage of fermentation cultures of direct introduction during the autumn-winter and spring-summer period of year. It is experimentally found and scientifically justified the content of fermentation composition of mixed mesophilic cultures Flora Danica (FD) and thermophilic monoculture Lbc. аcidophilus strain La-5 (La-5) for cultured butter with probiotic properties production.
