The dissertation based on experimental and theoretical research to determine the conditions of intensification of biologically active substances from plant materials of different species. Formed the physical-mathematical model processes of heat and mass transfer in plant materials the transformation energy of microwave to the internal energy. Created the physical-mathematical model processes of heat and mass transfer in plant materials spherical shape particles, supplementing the models obtained for other bodies of classic form. Developed method of mass flow stability that allows by calculation to determine the concentration of components in the real body shape depending on the time of traditional methods for extraction and for microwave methods for extraction, measured by the coefficient of diffusion.
