Essay

The thesis is devoted to developing the technology of albumin cheese "Urda" using a mixture of wheys from both sheep and cow milk and its implementation in dairy production. Proper correlation of sheep and cow wheys were brought into, based on the technical requirements for the finished product and grounded their treatment options and the way of proteins coagulation.
