Dissertation is devoted to the scientific study and technological development of preserves out of mollusks (Rapana, squid, octopus) and spicy aromatic roots. We offer the use of spicy aromatic roots, organic acids, accelerated electrons flow to regulate the structural characteristics of mollusks and to accelerate maturation of preserves. Were developed formulas of preserves. New technology can save from 75 to 93 % of essential components of raw material in the finished product. Developed and approved regulations. New technology approbated in industrial conditions.
