The thesis is devoted to scientific substantiation and technological development of semi-finished products of protein and carbohydrate with carotenoid vegetable raw materials. The composition and properties of vegetable raw mashed with regard to their potential applications in the technology of semi-finished protein-carbohydrate using carotenoid vegetable raw materials. Studied the protective effect of the stabilizer "Astri Gel" biologically active substances carotenoid vegetable raw materials. Substantiated and developed the technological scheme of production of semi-finished protein-carbohydrate using carotenoid vegetable raw materials. Indices characterizing the nutritional value of the developed semi-finished products. Realized the introduction of new technologies in the restaurant business establishments of Ukraine. The data on the cost-effectiveness of introducing new semi-finished products in production.
