Essay

The thesis is devoted to scientific substantiation and the development of new technologies of vegetable pastes with iodine-containing raw materials. The directions of nutritional prevention of iodine deficiency and the use of iodine-containing materials in the diet of the population are investigated in the dissertation. The choice of iodine, raw vegetable and dairy products combined to produce vegetable pasta is absolutely substantiated. The technological parameters and modes for obtaining a puree from vegetable and vegetable pastes with iodine-containing raw materials with desired functional and technological properties are defined and justified. The raw material composition is optimized and developed a production technology of vegetable pastes with iodine-containing raw materials. The regulatory documentation for culinary products using vegetable pastes with iodine-containing raw materials is elaborated and approved. A set of activities on introduction of research results into practice institutions restaurant industry and assess their competitiveness.
