The thesis is devoted to scientific substantiation of improvement of technology and the development of food concentrates jelly fast food using herbal supplements, based on the swelling of starch. Investigated physicochemical and structural and mechanical properties swelling types of starch. The influence of food ingredients and process parameters on quality indicators swelling starch paste. Developed based on semi-finished extract of Hibiscus. Optimization of jelly prescription fast food. Enhanced food concentrates jelly using Hibiscus extract and fruit powder and swelling starches.
