The dissertation is devoted to improvement of the technology the groats production from the grain of triticale. The research is based on the scientific substantiation of exfoliation the grain of triticale, the options of the water and the heat. The dissertation is presents the results of research to determine the physical, chemical and technological parameters of triticales grain quality and their comparative characteristics with the winter wheat grain. The fractional composition of grain triticale was studied. Scientifically substantiated and experimentally confirmed the high technical and economic performance of technologies for cereal products of grain triticale, characterized by high culinary estimate. As a result of the recommendations of triticale grain processing technologies for cereal products which are introduced on cereal plants.
