Essay

The object of study - refining technology and fractionation of fat coriander oil (FCO). The purpose of research - development of low-waste resource-saving technology of complex processing of FCO based refining and fractionation. Research methods and instruments - the organoleptic and physico-chemical; gas-liquid chromatography method; spectrophotometry; DSTU 7045; methods of experimental investigation of the extraction refining, enzymatic esterification, adsorption and fractional crystallization are developed independently by improving prototypes; mathematical and statistical methods of Microsoft Excel, MathCad. Theoretical results - for the first time found that the extraction refining FCO using ethanol as the extractant provides an extraction of free fatty acids and does not affect the natural chlorophyll content in refined oil; - continued found using the method of enzymatic esterification of free fatty acids in the oil with ethanol, which causes an increase in physiological values oil due to the formation of ethyl esters of fatty acids. Practical results - justified promising technology of complex processing of FCO displays, which allows you to obtain new foods - fat fraction semisolid "Petrozelin coriander" bakery destination and a liquid fraction which is proposed to use as a salad oil; proven usefulness in refining the extraction as a selective solvent of ethyl alcohol, which is a food product (patent of Ukraine № 92131); reduction of losses in the refining FCO by reducing the duration and cost reduction staging extracting (Ukraine patent number 104364). Novelty - experimentally obtained new scientific results on the extraction of free fatty acids from the FCO by solvent extraction refining ethanol, including the composition and quality indicators. The results obtained in comparison with the alkaline refining of oils to develop a new resource-saving technologies of extraction and refining technology to develop oil fractionation obtained. The degree of implementation - technological instruction TI 21799332-001-2015 "Technology extraction refining and fractionation of fat coriander oil," which tried out in research and industrial applications in the profile "Poliresurs" (Harkkov, test certificate from 17.11.2015). In production testing laboratory Company "Ridna Palyanitsa" (Dnepropetrovsk) studied "Petrozelin coriander" as a component for bakery products (test certificate from 18.09.2015).
