Essay

The work is devoted to the increase of comminutors specific productivity and the reduction of their operation cost by coordinating the ways to feed meat raw material to a cutting unit and the design of cutting set elements. According to the results of the completed set of theoretical and experimental studies, dependencies are obtained and patterns are found that have developed the regulations on the influence of the main constructive and kinematic parameters of comminutors on the process of grinding of meat raw material. The value of structural and mechanical properties of beef, pork and chicken meat, which are most often processed in walks, is specified. On the basis of the above, the method of calculation, with the use of which new designs of large and small-sized comminutors and their working bodies are developed with coordinated characteristics that have high specific productivity, is improved. The results of the work have been implemented at the enterprises of PLC "Cherkasy Food Company", PC "Alnat" in Cherkasy and in the educational process of Cherkasy State Technological University. The calculation of economic effect from the use of comminutors developed structures confirms the feasibility of their introduction into production.
