The dissertation is concerned with solution to a problem of intensifying the process of biologically active substances formation of the wheat while germination by applying a preliminary short-term low-temperature processing (SLP) and/or a biological preparation "Baikal EM-1" at the grain soaking stage, which leads to an improvement of its chemical composition. On the basis of experimental research, the effectiveness of the using of grain mass SLP before germination and/or biological preparation "Baikal EM-1" while wheat germination in the wheat cereal flakes of enhanced biological value technology was determined. Cumulative result of theoretical and experimental research allowed developing the principal technological scheeme of wheat cereal flakes of enhanced biological value and process flow diagram and thus broadening the range of the grain-processing industry products.
