The thesis is devoted to the development and implementation of a mechanism for evaluation and management of operational risks of bakery enterprises. The paper summarizes the approaches to the interpretation of the economic categories «risk», «risk assessment», «risk management», the defined place of operational risk in the general classification of risks, allocated short-term and long-term risks of different nature, require different methods of assessment and require appropriate managing them. According to the results of the research, the place of risk management of operational activities in the overall management and risk management of the company is determined, its main tasks are outlined.The main risks of the environment of bakery enterprises are investigated, systemic risks are identified, and the ability to adapt and the presence of mechanisms for counteracting these risks are identified, the main threats and obstacles of the development of the baking industry are identified.
