In the dissertation, trends in the demand and consumption of hydrobionts in Ukraine are considered. Analyzed the prospects for the development of the Ukrainian market of hydrobionts. Physico-chemical, structural-mechanical, organoleptic and microbiological indicators of the soft body of freshwater mollusks were studied. The technology of semi-finished freshwater mussel and culinary products with its use has been developed and scientifically substantiated. Their nutritional and biological value, microbiological indicators and safety indicators were investigated, storage conditions and terms were established. The regulatory and technological documentation was developed and approved, the introduction of new technologies in the enterprises of the restaurant industry and the food industry was carried out. The degree of digestibility of the semifinished product from freshwater mussel and its influence on the medical and biological indicators of biological objects are established. An assessment of the socio-economic effect of the development and introduction of semi-finished freshwater and culinary products in the restaurant industry enterprises has been carried out.
