The process of a long storage of sugar is analysed. The mathematical model of heat-mass transferring in a porous body with a soluble skeleton, which has large porosity and small water content, is developed. The algorithm and the program of account heat-mass transferring at a storage of sugar are created on its basis. Technique of natural researches of processes heat-mass transferring in a sugar bulk is developed. The experimental data about heat transfer in a stack of sugar-sand at a storage, dynamics of change its water content and qualitative parameters at a storage, change of temperature and relative humidity of air in a not heated warehouse of sugar during the period of a storage are received. The technique of forecasting heat and humidity of a condition and quality of sugar is created during storage. Key words: sugar, storage, heat-mass transferring.
