Thesis devoted investigation of different physiological factors - temperature and means of cultivation, the acidity of the medium, carbon and nitrogen nutrition and also some biological additions - influencing milk coagulating ferment's accumulation of biomass by М-81, А-031, А-032 і Р-323 Hirschioporus laricinus (Karst.) Ryv - the products of milk coagulating proteases.There have been investigated more than 120 nutrition mediums in the present paper. The 5 times increasing of milk coagulating ferment's output is achieved by means of sugars concentration's selection. Some recommendation concerning industrial cultivation of H. laricinus cultures are given.
