Essay

The object of the research: berries and the products of treatment of the black elderberry. The aim: the scientific ground and the development of the technology of three kinds of stuff. The CIE and Hunter's, PC, TS-chromatography, spectrometer and others. Scientific novelty: the composition of the barries of elderberry of the Ukraine, the ground of the parameters of treatment, heat resistance of anthocyanic complex and the conditions of stability of pigments, the sedimentically-regeneration, membranic, vacuum steamed means, the composition of colorants, the terms and the storing. The project of standarts on colorants from elderberry is conditions of elaborated. The directions of their applying: food diffrent kinds of industry.
