Essay

The thesis considers the problem of creation of food substance for health-improving and clinical nutrition on the basis of phytogenous biologically active additives (there is a substantial source of raw materials in Ukraine). Scientific essential principles and methodologies with optimized chemical composition based on application of physiologically functional phytogenous ingredients have been developed taking into account the modern positions of nutritiology. The choice is well-founded and expediency of joint using of phytogenous biologically active additives in the form of model composition has been proven. Technologies of flour, rolls and buns, confectionery, cookery and desserts with phytogenous biologically active additives are scientifically well-founded and developed. There has been specified integrated assessment that indicates the qualitative indices of products' nutrient structure with phytogenous biologically active additives have higher value and approach to their optimum level.
