Essay

The object – the proteins of cow milk casein complex and products of their proteolysis with biological activity. The aim – to reveale the new ways of bioactive peptides creation from cow milk casein, to proove their biologiс activity and to characterize them biochemically. The methods of the investigation – biochemical, physic-chemical, microbiological, physiological, electron microscopy. The novelty – the proteolytic and other important biochemical properties of 52 strains of lactic acid bacteria are characterized. The effective method of electrophoresis have been suggested for identification of casein fractions. The schemes are developed for casein micelle and casein main fractions isolation. By means of designed model proteolytic system the possibility of casokinins generation under the action of proteases from some strains of prt + lactococcus sp. has been shown. The probability of casokinins generation increases under the combine action of lactococcal proteolytic enzymes and milk-clotting enzymeson casein. The fields are biotechnology of bioactive peptides, functional products, starters.
