The dissertation is devoted to the scientific substantiation of the technologies of ca-rotenoid additives based on complex use of heat treatment (or freezing), toing breakup and antioxidants from natural spices and officinal plant raw materials, joint application of which results in mechanical destruction of biopolymer complexes with bound forms of low-molecular biologically active substances.
