Object of investigation: the interaction of metal ions and organic acids with dyes of different types. Aim of research: to create foundations of using photometric reagents immobilized on polymer iox exchangers in analysis of food products and on the base of obtaining transparent solid phase concetrates to develop hybrid spectrophotometric procedures for the determination of micro-quantities of toxic metals which are suitable for toutine quality control of food products. Methods of research: IR-spectroscopy, diffuse reflectance spectroscopy, solid phase spectrophotometry, atomic absorbance spectrometry, polarography, potenciometry. Equipment: КFК-3, I-160, IR-, DRS-, AAS-, UV-VIS-spectrometers, polarograf, ultrasonic bath. Theoretical and practical results: a new direction in the analysis of food products was created. It implies the applicetion of photometric reagents immobilized on polymer ion-exchangers for determination of micrograntities of metals by using transparent solid phase concentrate. The set of procedures was developed. Novety: on the base of systematic investigation of conditions of immobilization of 20 dyes of different types on surfaces of ion-exchagers the novel optically transparent solid phase reagents for solid phase spectrophotometric determination of metals and organic acids were developed. The degree of application: The developed procedures were appied in research at departments of National University of Food Technologies and approved in factory laboratories meat-packing plants, milk plant, in union "UKRPIVO". Fields of use: laboratories for quality control of food products.
