Scientifically reasonably, it is worked out, the energy saving technological processes of freezing and low temperature of long duration storage of fruit and vegetable products are ex-perimentally confirmed and inculcated with different biochemical and physics-mechanicals properties on the basis of mathematical design of technological processes of freezing with the use of in theory certain thermophysical descriptions of fruit and vegetable raw material.
