The dissertation is devoted to scientific substantiation of the combined processes and development of resource-saving equipment for peeling vegetable raw materials. The necessity for the creation and implementation of ecologically safe universal and multi-operational compact equipment to manufacture is proved. This will allow processing various kinds of vegetable raw material and manufacture high-quality products. Scientific and theoretical grounds of the combined processes of peeling vegetables are developed. Original techniques and installations proving the experimental data concerning the adequacy of the suggested theoretical models for peeling vegetables as well as the effectiveness of using combined methods and actuality for the creation of new resource-saving equipment are developed. Rational regimes and construction parameters of the equipment used for the combined processes of peeling sweet pepper, potatoes and onions are determined. The apparatuses for their implementation are worked out. Use recommendations for the equipment for peeling vegetable raw materials by the combined method, instruction manual and tentative specifications for the manufacture of experimental models are developed. The increase of technological parameters of the combined processes of peeling vegetables with the use of innovative equipment and its economic effectiveness is determined.
