The dissertation is devoted to the questions concerning the improvement of methodological approaches to quality assessment and authenticity of food raw materials and frozen products through the scientific substantiation of the signatures of properties of reversible liquid part from them, and development of the production technology of the reversible frozen semi-products and food staff. For the first time introduced the concept of "signature" to assess the quality and authenticity of raw materials, developed and scientifically substantiated method of sample preparation, which involves getting resistant to sedimentation liquid phases that can be used as samples in the quality assessment.
