In the thesis the conditions have been determined on the basis of experimental and theoretical data on effects of microwave fields on plant materials of different kind (corn, stern, and other parts of a plant) at which within the framework of each of the investigated methods (biostimulation, thermal processing, extraction, drying) a maximum positive effect is expected in terms of intensification of the heat and mass transfer. Statements on the peculiarities of heating in microwave fields have been formulated with respect to cell structure and plant transport system, experimental data have been generalized and models have been elaborated that take into account connections of transfer processes with structural changes of materials and physical parameters of the system.
