In the dissertation work the task of creation of innovative energy-efficient equipment for processing viscous and disperse products, development of methods of calculation and optimization of such equipment is solved and solved. The methods of energy management conducted system research and installed energy-intensive objects of food technology. The solution of tasks in the work was carried out according to the general scheme: "Physical and mathematical model - experiment - integration and engineering method - creation of an experimental sample". As a result of the complex of analytical, experimental and industrial studies, designs have been developed, the influence of constructive and regime parameters on the kinetics of the process in innovative devices has been determined: driers based on the rotation thermosyphons; evaporating apparatus on the basis of rotation thermosyphons; recuperative dryers based on thermosyphons. In the paper, the representation of the structure of the equations in the generalized variables for calculation for the calculation of: the process of heat transfer during the evaporation of food non Newton liquid ; the degree of mixing of the grain layer, the coefficients of mass return, the duration of the drying process of wheat, the specific energy consumption for drying in the recuperative grain dryer; coefficients of mass transfer in a dryer based on rotation thermosyphons. The scientific bases are grounded, engineering methodology, computer program for calculation, computer modelling and optimization are carried out: a racing machine on the basis of rotation thermosyphons; recuperative dryer based on thermosyphons; driers based on rotation thermosyphons. The functional scheme of the dryer on the basis of the thermosyphons, design documentation (drawing) for the production of individual units of grain drying: a spray-dryer, a drying chamber, a thermosyphon heater, was developed. The economic efficiency of using the developed innovative models of technology and technologies at the enterprises of the branch is proved.
