The thesis is devoted to theoretical and experimental substantiation of technologies of stabilized and structured sphere-like semi-finished products based on dairy raw materials, obtained by realizing the potential of lactocalcium. The production of developed semi-finished products has made it possible to improve the efficiency of technological processes of processing of dairy raw materials, to develop a wide range of competitive products with high consumer properties and export potential. Based on theoretical and experimental research, the scientific concept is formulated and proved - controlled changes in the content of ionic lactocalcium in the composition of technological liquid medium based of dairy raw materials by adjusting the solubility of calcium-containing salts and the formation of alginate-lactocalcium complexes will allow colloidal stability and structuring of food systems to provide a wide range of semi-finished products with new consumer properties. The complex of data that characterizes the organoleptic, physico-chemical, microbiological and toxicological indicators of new products, its nutritional and biological value is obtained. The normative and technological documentation was developed and approved, the implementation of scientific and technical developments in production and the educational process was made.
