The dissertation is devoted to the development of fructans technology and dietary supplements on their basis from plant raw materials. The scientific concept and directions of its realization are offered. Scientifically substantiated and experimentally established the possibility of high molecular weight fructans and dietary supplements based on them obtaining from plant raw materials. Dependence of physicochemical properties of fructans from the type of raw material and fractionation of its components are revealed, which ensures obtaining a product with predicted quality in the raw material - inulin system. For the first time theoretically substantiated and developed scientific provisions of innovative biotechnology of HP fructans from different inulin-containing raw materials with the inulin production with a degree of polymerization of 30 and more units. The parameters of agrotechnology of traditional and wild-growing inulin-containing plants in the forest-steppe zone of Ukraine have been theoretically substantiated and experimentally confirmed, which ensures their most effective biological potential in conditions of long-term cultivation. The technological schemes of processing of raw materials containing fructans with an average degree of polymerization from 20 to 30 and more are developed. The formulation and creation of the dietary supplements technology for therapeutic prophylactic appointment based on PH fructans is substantiated. The technological schemes for dietary supplements processing based on high molecular fructans have been developed. Clinical studies have proved the feasibility of using the obtained highmolecular fructans and dietary supplements on their basis with therapeutic prophylactic effect in diabetes mellitus, with impaired lipid metabolism and pathologies of the endocrine system. Proven profitability from the introduction of technologies for the production of high molecular weight fructans and dietary supplements on their basis.
