Essay

In the dissertation, based on the study of psychological and pedagogical scientific and methodical literature, lexicographic materials, scientific substantiation of theoretical and methodical foundations of professional training future specialists in hotel and restaurant business was carried out. The problems of the specified process were highlighted, namely: quality of organization and methods of educational process, lack of interaction between enterprises and educational institutions; quality of specialists’ professional activity, readiness and ability to perform professional functions at the workplace in real production conditions; weak methodological differentiation in training managers and specialists; lack of material and technical base with specialized laboratories to ensure proper practical training for applicants for education; low interest in personal and professional development due to lack of motivation and false self-assessment, etc. The object of the study is theory and practice of professional training of future specialists in hotel and restaurant business. The subject of the study is system of professional training of future specialists in hotel and restaurant business in higher educational institutions. The purpose of the study is to substantiate and experimentally verify system of professional training of future specialists in hotel and restaurant business in higher educational institutions. Research methods: theoretical, empirical, methods of statistical processing of the obtained data. In the dissertation, based on the analysis of psychological-pedagogical and methodological literature, theoretical-methodological justification, development and experimental verification of effectiveness of system of professional training of future specialists in hotel and restaurant business in higher educational institutions were carried out. In the process of research, essence and peculiarities of professional training of future specialists in hotel and restaurant business were clarified, structural and systemic analysis of pedagogical support was carried out. Theoretical-methodological basis of the dissertation research was made up of individual-personal, competence-activity, practice-oriented, technological and cultural approaches, which allowed: to substantiate tasks and directions of the research; determine program methodical structure, research stages; find out the essence of basic concepts; characterize conceptual and categorical apparatus of the research; develop a concept, justify pedagogical conditions for training of future specialists in hotel and restaurant business and directions for modernization of the system of professional training of future specialists in hotel and restaurant business in higher educational institutions; analyze empirical data and formulate conclusions. The system of professional training of future specialists in hotel and restaurant business, which is based on creative-competence paradigm, is substantiated; concepts: methodological; theoretical; technological; practical. Pedagogical support for the process of professional training of future specialists in hotel and restaurant business in higher educational institutions. A diagnostic toolkit has been created to assess the levels of readiness of future hotel and specialists restaurant for professional activity. The criteria, indicators and levels of readiness of future hotel and specialists restaurant for professional activity. The effectiveness of the structural-functional model of the system of training future specialists in the hotel and restaurant business for professional activity has been proven.
