It has been found that seeds 11S globulin is a storage protein of beets. The composition of its subunits, polypeptides, aminoacids, crioproperties, ontogenetic and genotypical variability has been studied. Its functional role and the ability to be a protein marker has been proved too. Types, numbers and frequency of spectra 11S globulin differ in varieties, species, lines.
