Essay

The scientific novelty consists in the development and scientific substantiation of the biological and technological basis for obtaining edible caviar, which ensures its quality and safety. On the basis of complex studies of the state of breeders in conditions of UZV, the composition of feed was optimized and a comprehensive, step-by-step approach to feeding sterlets was tested, which made it possible to increase the efficiency of the formation of the brood stock. The practical significance lies in the development of the basic components of the technology for the formation of the sterlet brood stock in order to obtain edible sterlet roe from the ovulated roe that was obtained by the perinatal method. The aim of the dissertation research was to study the improvement of sterlet productivity from the point of view of achieving the quality of edible caviar due to the optimization of technologies for the formation of the brood stock in conditions of closed water supply. Object of research: sterlet, caviar. The subject of research: biological foundations and technology of formation of the sterlet brood stock, indicators of the functional state, growth and development of fish, production of edible caviar in the process of ovulation, quality control of food products. Methods: laboratory methods (chamber processing, biochemical, biological analysis), microscopy, methods of histochemistry, radioautography, statistical analysis. Introduced into the practice of production activity – LLC «Oasis Bisan» of Mykolaiv, Mykolaiv region, with the design capacity of the fish breeding area of the enterprise of 25-30 tons of marketable fish and the production of 1-2 tons of edible caviar per year.
