Essay

The thesis is devoted to the solution of the problem of the creating radioprotective bread products with radioptotective substances: elamin, criopowders of calendula officialice, wheat germs. Complex analysis of home and foreign literary sources on the problem of radioprotective nutrition and usage of biologically active substances under the creation of consumer goods has been made. The necessity of using criopowders of calendula officialice, wheat germs and elamin under the production of bread products has been proved. Mathematical methods of optimizing bread products receipts and technological processes of their making have been developed. The dynamics of accumulating radionucleids under using bread products of radioprotective prescription with the above mentioned substances has been investigated. Four collections of receipts of curative and profilactic nutrition with using criopowders of calendula officialice, wheat germs and elamin have been developed and affirmed. The main results of this work fou nd their industrial application in the production of radioprotective foodstuffs at public catering enterprises of Ukraine (Hmelnitskaya and Zaporozhskaya Power Stations, Kiev, Kharkov, Lugansk, at the Kiev bakery plant No.1 in production condition). The field of application is the food industry and public catering.
