Thesis is devoted to the problems of study of influence of various technological factors on storage of farinaceous confectionery foods with a prolonged term of storage. Based on the research conducted, the qualification of farinaceous confectionery foods that makes it possible to determine the term of storage in cor correspnence with the predominating factor, has been developed and scientifically substantiated. Methodology and mathematical model for appreciation of quality of farinaceous confectionery foods in the process of storage based on complex and differential indicators have been developed. Key words: farinaceous confectionery foods, storage, self-oxidation, anti-oxidant, hardening, sorption, quality, standard documentation, introduction.
