Process of drying of potato pieces by mixed heattransfer. Theoretical and experimental verification of rational rates for production of dried quickreduced potatoes. The methods of research are physical, biochemical, organoleptical, mathematics model. The affect of technological, technical and process factors on MHT-drying of potato pieces are investigated. The degree of rational filling for functional container, which depend on its sizes and size of potato pieces, are determined. Technological card, rational rates and dryer for production of dried quickreduced potatoes are developed and introduce to practice with economy effecacy. The use - branches of food industry.
