Financial & business activity's economic strategy for food processing enterprises. To develop scientific and system support to its formation and assesment. The methods of a strategic management theory and a theory of branch organization. The theoretical, methodological and methodical aspects of formation of enterprise's strategy are elaborated. The main rules of the strategy of restructuring on example of the oil-adipose enterprises are justified. The results of research are utilized at enterprises of industry and in the course of educational activity. The sphere of use are the enterprises of a food-processing industry.
