Essay

The thesis is devoted to elaboration technology of manufacturing cereals and flakes from the new groats raw material. The combination of the results of theoretical and experimental studies allowed to comfirm the possibility to use soriz in cereal manufacture, efficiency of its preparation for processing by means of fractioning and short period of extracting moisture out of periphery layers before shelling. Shelling and grinding regimes of soriz grain and also water thermal processing of the kernel having been elaborated with the aim of the future flattening allowed to confirm technological process structure of soriz grain processing into groats and flakes.
