The thesis present the results of theoretical and experimental researches of the use of cavitational effects with the aim to intensify the processes of crude juice purification in sugar refining. The mathematical models of creation of a cavitation bubble field at a hydrodynamic cavitation and dynamics of a steam bubble in a flow underheating of a liquid. The methods of purification of crude juice are designed, which is bottomed on his simultaneous by cavitation and chemical treatment and by steam-condensation of a cavitation an activation of a limewater. The design of a settler for of suspensions at the stage of purification of crude juice is offered. The data about efficiency of methods and their introduction in a sugar industry are adduced.
