Essay

The theses is devoted to the fact of working-out the technology of production vegetative phospholipid products having improved emulsifier force with the purpose of application it in a food-processing industry as quality emulsifier and simultaneously biologically active additive. The technology of producing of phosphatide concentrate (PCD) and the extracted phospholipids (PLP) was worked out. The technology of reception of phospholipid product (HPL) produced from PCD that was modified by a biotechnological way with application of developed phospholipase A2 enzyme preparation was worked out and optimized. The qualitative changes of received phospholipid products during storage and the functional-technological properties of HPL in use for production mayonnaise and wheat bread were investigated.
