The dissertation is subjected for the granting of P.h.d. scientific degree of in engineering science, specialty 03.00.20 "Biotechnology". Institute of Food Resources of the National Academy of Agrarian Sciences of Ukraine. Kyiv, 2023. The dissertation is devoted to the study of the processes of biotransformation of brewery waste with the production of biogas and feed biomass. The paper investigates the periodic and continuous mode of fermentation of brewery wastewater with the maximum degree of purification and production of biogas and feed biomass. The advantages of conducting the methane fermentation process in the thermophilic mode compared to the mesophilic mode are shown. The parameters of conducting methane fermentation of protein sediment at different temperature regimes to obtain a high degree of destruction of bitter substances have been worked out. The conducted studies of the amino acid composition of fermented scum showed a high degree of enrichment with essential amino acids, which makes it possible to use it in fodder production. An equipment-technological scheme for the biotransformation of brewery waste with the production of biogas and fodder biomass has been developed. An economic assessment was carried out and the economic efficiency of using methane fermentation technology for the processing of brewing waste was substantiated.
